rudder overhaul - spinnaker or cruising chute

Hello I have a Snowgoose 35 that has the original rudders which are showing signs of wear. A crack has appeared a couple of inches from the top which goes all the way around them. One of them is weeping rusty water which is quite concerning. Does anybody know how I can strip them out to carry out an inspection please.
This boat has proved to be fairly sluggish under sail. I am considering adding a cruising chute or spinnaker to improve performance in light winds. What sizes would be best for this boat please.
