How to disable hydraulic steering

Dear all
Just got a Prout Sirocco and I can see that it has a slot for an emergency tiller and a suitable bit of wood ,
But
Presumable to make use of this the hydraulic system has to be disconnected ?
How does one do this ?

If you have the reservoir as to see in this manual, to open the valves in the booton of it...

Had a good look for the reservoir and talked to the man who fitted the steering. He says no way to disable and he always assumed that if it broke it would be already disabled so he could use a tiller extension.

The bit of wood fits into a slot on one of the rudders. I hope I never have to use it ! The sail drive can be turned which is very handy manoeuvring in harbours ( if fact I use this and throttle rather than rudders for tight situations) and it might be possible to use this with the motor in lack of rudder situations.
